Star Fruit and Cream Tart

- 250 grams Pastry flour
- 100 grams butter
- 80 grams sugar
- ½ Orange (for juice and zest)

- 100 grams Quark
- 100 grams Yogurt (0.1% fat)
- 100 grams cream cheese
- 2 Tbsps powdered sugar
- 100 grams fresh Raspberries
- 4 Star fruit
- 3 Tbsps Maple syrup
- butter (for buttering ramekins)
- Legume
- Strawberries (for garnishing)
- mint (for garnishing)
Preparation steps
Combine flour, sugar, butter, orange juice and zest and knead until smooth dough forms. If dough is too crumbly, add some water. Wrap into clingfilm and let rest for 30 minutes. Roll out dough on a floured surface and cut into circles to fit ramekins. Butter ramekins and spread dough into them up to edges. Prick dough with a fork several times, cover wtih little baking paper and weight down with legumes. Bake in preheated oven at 200°C (approximately 400°F) for about 10 minutes. Remove from oven, remove legumes and paper, let cool slightly, then loosen from ramekins and cool on wire rack.
Combine quark with yogurt, powdered sugar and cream cheese. Carefully add cleaned raspberries and fill tarts with mixture. Rinse star fruit, cut into slices and top tarts with slices. Drizzle with syrup and serve garnished with fresh strawberries and mint.
