- 4 Spruce Needles
- 2 sprigs thyme
- 1 kilogram sugar
- 1 lemon (juiced)
Preparation steps

Splash the spruce needles (do not wash). Mix together with the thyme and 750 ml of water (approximately 3 cups) in a pot and simmer, covered, until the needles look more of a white color.

Strain through a cheesecloth and pour the liquid back into the pan. Add the sugar and lemon juice and stir. Reduce down to a thickish syrup, stirring occasionally. Remove from the heat and allow to rest for 10-15 minutes.

Pour the spruce needle honey into hot rinsed jars. If desired, add the boiled pine needles to decorate it before sealing the jar.
