2 cloves garlic cloves (chopped)
1 small onion (finely chopped)
2 cups half and half cream
½ cup Gorgonzola (crumbled)
½ cup Parmesan
kosher salt (to taste)
freshly ground Black pepper (to taste)
16 ozs fresh or dried, spinach ribbon pasta
1 bunch parsley (finely chopped)

1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Peeler, 1 Brush, 1 Kitchen twine, 1 Parchment paper

Preparation steps

Melt butter in a saucepan over medium heat. Add onion and garlic, saute for 5 minutes until soften and fragrant.

Add half and half, and heat through. Do not boil. Whisk in Gorgonzola and Parmesan cheeses. Season with salt and pepper. Remove from heat. Let rest for 5 minutes. Sauce will thicken as it sits.
3.
Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook per package instructions or until al dente. Drain pasta and add cheese sauce to it. Toss to coat.
4.
Garnish with parsley. Divide among bowls. Serve.
