- 200 grams baby Spinach
- 3 Fennel bulb
- 150 grams Pine nuts
- 4 Tbsps olive oil
- 2 Tbsps Orange juice
- ½ tsp honey
- salt
- freshly ground peppers
Preparation steps

Rinse the spinach and spin dry. Rinse the fennel bulb, remove the core and cut into very thin slices. Toast the pine nuts in a dry skillet until golden brown.

Whisk together the olive oil, orange juice and honey until smooth. Season with salt and pepper. Arrange the spinach, fennel and pine nuts onto plates, drizzle with the dressing and serve.
