- 1 cup unsalted butter
- ¼ cup Golden syrup
- 1 cup light brown sugar (scant)
- 1 cup all-purpose flour
- 2 tsps Baking powder
- 1 tsp salt
- 4 tsps ground ginger
- 2 tsps ground cinnamon
- 3 ½ cups rolled oats
- 2 eggs (beaten)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
2.
Melt the butter and syrup in a pan over a low heat. Set aside to cool slightly.
3.
Stir together the sugar, flour, baking powder, salt and spices in a mixing bowl and mix well to combine.

Stir in the rolled oats and mix well. Pour in the melted butter and syrup and stir until well combined. Stir in the eggs.
5.
Spoon onto the baking trays, well apart and shape into elongated rounds. Bake for 8-10 minutes until golden brown. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
