- 2 large carrots (rinsed, chopped into bite-size pieces)
- 1 onion (peeled and chopped)
- 1 clove garlic cloves (peeled and minced)
- 1 tsp fresh ginger (minced)
- 1 ½ tsps Curry powder (plus extra to sprinkle)
- 2 cups Vegetable broth
- 1 ⅔ cups Coconut milk
- Sea salt (to taste)
- beet chip to serve (optional)
Preparation steps

In a large saucepan set over medium-high heat, simmer the carrots, onions, ginger and curry powder in vegetable broth for 20 to 25 minutes, or until carrots are tender.

Remove pan from heat source and allow mixture to cool slightly. Using an hand-held immersion blender, puree mixture until smooth.
3.
Return pan to heat and add coconut milk, stir until well combined and heated through.
4.
Ladle into serving bowls and garnish with salt, a pinch of curry and beetroot crisps, if desired.
