Spaghetti with Artichokes and Anchovies

- 200 grams Spaghetti
- 2 Artichoke
- 1 white onion (chopped)
- 1 garlic clove (peeled and chopped)
- 2 Anchovy fillet (chopped)
- 2 Tbsps lemon juice
- 2 tsps fresh thyme (finely chopped)
- 6 Tbsps olive oil
- 1 sm jar Tomatoes
- salt
- peppers
- 50 grams Parmesan (freshly grated)
- 50 grams black Olives (pitted)
Preparation steps
Mix the lemon juice with the water. Trim the stems of the artichokes with a sharp knife, cut off the top half of the leaves and peel the skin with a sharp knife, and scrape out the hay with a teaspoon. Place the artichokes immediately into the lemon water.
Cook the artichokes in boiling water for about 10 minutes. Drain the artichokes and cut into pieces.
Heat olive oil in a pan and saute the onion, garlic and anchovies in it until the onion turns translucent. Add the chopped tomatoes and simmer for about 10 minutes. Add the warm artichokes and thyme, season with salt and pepper, and simmer. Stir in the the olives at the end.
Cook the spaghetti al dente in boiling water. Drain the spaghetti and gently mix into the sauce. Serve sprinkled with Parmesan and olives.
