1 ½ cups milk
¼ cup Yeast
1 Tbsp sugar
2 Tbsps butter
1 pinch salt
¾ cup raisins (or to taste)
clarified butter (for frying)
For the goat's cheese with spinach and nuts
2 cups young Spinach
½ cup Hazelnuts (roughly chopped)
1 Goat cheese
1 Tbsp honey
2 Tbsps white balsamic vinegar
1 tsp Oil
salt

1 Salad spinner, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Non-stick pan, 1 Plate, 1 Paper towel, 1 Bowl, 1 Tablespoon, 1 Whisk

Preparation steps

Mix the yeast with a little lukewarm milk. Put the flour into a bowl, make a well in the centre and add the yeast. Blend the yeast with a little of the flour and leave to stand for 15 minutes to allow the yeast to start working. Then add the remaining struwen ingredients and mix to a smooth batter. Leave to rise for 1 hour.

Heat a little clarified butter in a frying pan and fry tablespoonfuls of the mixture to make small thick pancakes. Toast the nuts in a dry frying pan.

Mix the honey, oil and balsamic vinegar to make a vinaigrette. Season with salt and pepper. Slice the goat's cheese and dress with the vinaigrette. Wash the spinach and shake dry.
4.
Arrange the struwen on plates with the spinach, nuts and goat's cheese and serve.
