- For the soup
- 2 ⅔ cups Beets
- 9 ozs potatoes
- 1 onion
- 1 Tbsp butter
- 4 cups instant Meat stock
- 1 tsp dried marjoram
- 1 bay leaf
- 2 Tbsps Red wine vinegar
- salt
- freshly ground Black pepper
- To garnish
- 4 Tbsps finely diced Vegetables (if desired)

Preparation steps
1.
Peel and dice the onion, potatoes and beetroot.
2.
Heat the butter and sweat the onion until transparent. Add the bay leaf, diced potato and beetroot and cook all together for a short time.
3.
Pour in the stock and stir in the marjoram. Bring to the boil and simmer for about 20 minutes.
4.
Remove the bay leaf, puree the soup and season to taste with salt, pepper and vinegar.
5.
Serve the beetroot soup in bowls, garnishing each with 1 tbsp diced vegetables if desired.
