- 1 tsp lemon zest
- 3 cups Whole milk
- ⅔ cup caster sugar
- 1 tsp Vanilla bean (seeds scraped out)
- Sea salt
- ground cinnamon
- ¼ cup unsalted butter (melted)
- ⅜ cup double cream
- 4 canned Peaches (drained)

Preparation steps

Combine the rice, lemon zest, milk, sugar, vanilla pod and seeds, salt, and ground cinnamon in a slow cooker. Pour over the melted butter.

Cover with a lid and cook on a high setting for 2 hours 30-45 minutes until the rice has absorbed the milk and is tender.

Stir through the double cream and spoon into bowls. Serve with a garnish of peach slices on top.
