- 4 Tbsps butter
- 4 cloves garlic cloves (finely sliced)
- 4 Sole (cleaned)
- 2 Tbsps chopped parsley
- Lime juice (from one lime)
- 2 Limes (halved)
- Arugula (to garnish)

Preparation steps
1.
Heat the butter in a large frying pan over a gently heat until foaming.

Add the garlic, cook for 1 minutes then place 2 of the soles, skin side down, in the pan. Gently fry for 3 minutes then turn the sole over and cook for 2 more minutes or until the fish is just cooked through, basting the fish with the melted butter and garlic as it cooks.

Remove the fish from the pan and keep warm, then cook the other 2 soles, adding a little more butter if necessary, and remove from the pan.

Add the parsley and lime juice to the pan, let bubble then pour over the fish. Return the pan to the heat and quickly heat the lime halves, cut side down, until lightly browned. Serve the fish garnished with the rocket and the lime halves alongside.
