- 1 Vanilla bean
- 1 Tbsp green Curry paste
- 600 milliliters Coconut milk (canned)
- 125 milliliters Chicken broth
- 100 grams Snow peas
- 100 grams Baby corn cob
- 400 grams raw shrimp (peeled)
- 1 tsp cane sugar
- 1 Red chili pepper
- cilantro (for garnish)

Preparation steps

Cut the vanilla bean in half lengthwise, scrape out the seeds and heat with the curry paste, coconut milk and broth. Rinse the snow peas and cut into strips, cut the baby corn in half lengthwise and simmer both for 2 minutes in the coconut broth.

Then add the shrimp and simmer about 4 minutes until done (do not boil.) Rinse the chile pepper, remove the seeds, cut into thin rings and add to the broth with sugar to taste. Serve garnished with cilantro.
