Sandwich Cookies with Filling
- For the biscuits
- ½ cup butter
- ½ cup sugar
- 1 honey
- 1 egg yolk
- 1 ½ cups self-rising flour
- For the filling
- ¼ cup unsalted butter
- 1 ½ cups powdered sugar (plus extra for dusting)
- 3 Tbsps honey
- 1 Tbsp Almond flour
- 1 tsp vanilla extract
For the biscuits: heat the oven to 170°C (150° fan) 325°F gas 3. Line 2 baking trays with non-stick baking paper.
Beat together the butter and sugar in a large bowl until combined.
Beat in the honey and egg yolk until blended. Beat in the flour and mix to a soft dough.
Roll teaspoons of the mixture into balls. Place on the baking trays, well spaced to allow for spreading and flatten with the prongs of a fork.
Bake for 10-12 minutes until pale golden. Cool on the trays for 5 minutes, then place on a wire rack to cool completely.
For the filling: beat the butter until soft. Sift in the icing sugar, then beat in the remaining ingredients until combined.
Sandwich the biscuits in pairs with the filling. Sift icing sugar over the top.
