- 1 garlic clove
- 80 grams Bacon
- 15 grams butter
- 4 eggs
- 150 grams Whipped cream
- 150 grams Sour cream
- 1 pinch Saffron
- 1 Tbsp scallions
- salt
- freshly ground peppers
- 4 small Ramekins
- 2 red Endive
- several Leeks
- butter (for greasing)

Preparation steps

Peel shallots and garlic and finely chop. Cut bacon into small pieces. Melt butter in a frying pan and sauté shallots, garlic and bacon.

Whisk together eggs, heavy cream, sour cream, saffron and chopped chives, pour into frying pan and season with salt and pepper, stirring vigorously. Grease ramekins with butter, fill with egg mixture, bake in a hot water bath in a preheated oven at 150°C (approximately 300°F) for about 50 minutes, remove and let cool slightly. Trim endive and rinse leaves. Invert quiche onto serving plates and arrange endive leaves around the edges, securing with chives.
