16 ounces Puff pastry
1.333 cups button Mushrooms (chopped)
cup ham (diced)
For the sauce
3 tablespoons butter
3 tablespoons flour
2 ½ cups milk
¼ cup cream
1 tablespoon unsalted butter
2 egg yolks
½ cup grated Gruyere
salt
peppers
1 pinch Nutmeg

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 7. Lay the puff pastry sheets side by side to thaw.
2.
Melt the butter in a saucepan, stir in the flour and sweat without browning then stir in the hot milk.

Simmer for 8-10 minutes and season with nutmeg, salt and pepper. Add the cream and reheat, then remove from the heat and strain into a bowl. Beat in the remaining butter and keep warm to one side.

Lay the pastry sheets on top of each other, roll out on a floured work surface and cut out two hearts.
5.
Sauté the mushrooms in hot oil in a frying pan. Stir in the egg yolks into the warm sauce. Then add the diced ham, the mushrooms and the Gruyère. Season with salt, ground black pepper and nutmeg.
6.
Spoon the sauce onto one puff pastry heart and cover with the second heart, pressing the edges together. Leave to rest for 30 minutes, and then bake for 30-40 minutes in a preheated oven. Serve hot.
