1 small Turkey (giblets removed)
5 ozs butter (softened)
1 onion (halved)
9 ozs pork Sausage meat
2 tsps dried mixed Fresh herbs (i.e. sage, thyme, rosemary, marjoram)
1 Tbsp chopped parsley
1 handful fresh white breadcrumbs
1 egg (beaten)
12 cocktail Sausage
Oranges (to garnish)
rosemary (to garnish)
bay leaves (to garnish)

Preparation steps

Preheat the oven to 425ºF. Rinse the turkey inside and out and pat dry. Calculate the cooking time by weighing the turkey - 20 minutes per 16 ounces plus 20 minutes.

Rub the softened butter all over the turkey, place the onion halves in the cavity and sprinkle the skin with salt. Place the turkey in a large roasting tin, cover with foil and place in the oven. Roast for 30 minutes then baste the turkey with the meat juices, turn the oven down to 400ºF, and continue roasting for 1-½ hours. Remove the foil and continue cooking until the bird is cooked, basting every 30 minutes. Test by inserting a skewer between the leg and the breast; if the juices run clear the turkey is cooked.

Meanwhile, mix the sausage meat with the herbs, parsley and breadcrumbs. Season with salt then add the beaten egg and form into stuffing balls. Fry the stuffing balls and cocktail sausages in a frying pan in a little hot vegetable oil, or bake in the oven alongside the turkey for about 30 minutes.

When the turkey is cooked, let it rest in a warm place for at least 20 minutes before serving. Serve with the stuffing balls and sausages scattered around, garnished with orange wedges, rosemary sprigs and bay leaves.
