1 Tbsp olive oil
1 onion (finely chopped)
2 ⅔ cups fresh, white breadcrumbs
3.333 cups Pork sausage (without skin)
½ cup Dried Pear (soaked and chopped)
3 Tbsps fresh Tarragon (roughly chopped)
1 Turkey (2.2 kg)
6 rashers smoked Bacon (rind removed)

Preparation steps

1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4. Line a baking dish with baking paper.

Heat the oil in a small heavy-based pan. Add the onion and cook, stirring occasionally for 4 minutes or until translucent. Transfer to a bowl to cool. Add the breadcrumbs, sausage meat, pears and tarragon. Stir until well combined. Season with salt and pepper.

Spoon the sausage and breadcrumb mixture into the turkey cavity, and tie the turkey legs together with string. Arrange bacon rashers into a lattice pattern across the turkey and tie with string at rectangular intervals to secure.
4.
Bake for 2 hours or until cooked trough. Cover with tin foil if the bacon becomes too brown. When tested with a skewer, the juices should run clear. Allow the turkey to stand for 10 minutes before slicing.
