1 ½ kilograms Prime Rib (of beef)
3 garlic cloves

5 Tbsps olive oil

300 grams Pumpkin (or butternut squash)

2 Tbsps honey

Preparation steps

Preheat the oven to 200°C (approximately 400°F). Rinse the beef, pat dry and trim fat. Peel the garlic and finely chop. Rinse the thyme, shake dry, pluck off the leaves and chop finely. Mix the oil with garlic and thyme, season with salt and pepper and rub over the meat on all sides. Place beef in a greased roasting pan and roast in preheated oven 35-40 minutes. Turn the meat over and cook another 50 minutes. Meanwhile, cut the pumpkin flesh into bite-sized pieces.

Rinse the oranges in hot water and cut into slices. Place with the pumpkin on a parchment paper-lined baking sheet and season with salt, pepper and nutmeg. Drizzle with a mixture of olive oil and honey and bake in preheated oven for 30 minutes. Remove the finished roast from the pan and slice. ​​Arrange on a serving platter. Spread the pumpkin and orange slices around it, drizzle with the pan drippings and top with Gorgonzola. Serve immediately.
