½ cup Long grain rice (cooked according to packet instructions)
½ cup canned Kidney beans (drained and rinsed)
½ cup canned Lima bean (drained and rinsed)
½ cup canned Borlotti bean (drained and rinsed)
½ cup canned chickpeas (drained and rinsed)
2 Tomatoes (deseeded and chopped)
½ Cucumber (chopped)
2 leaves Iceberg lettuce (shredded)
2 Tbsps chopped parsley
2 Tbsps chopped Chives
2 Tbsps white wine vinegar
5 Tbsps olive oil

Preparation steps

1.
Mix the rice in a large bowl with the pulses, tomatoes, cucumber, lettuce and chives
2.
Mix together the vinegar and oil, season with salt and pepper and stir into the salad.
