Preheat the oven to 200 ° C convection.
Cut out circles from puff pastry (about 12 cm in diameter) (approximately 5 inches) and place in buttered ramekins. Line pastry with baking paper and weigh down with legumes. Bake in preheated oven at 200°C (approximately 400°F) for about 15-20 minutes or until golden brown. Take out of the oven, remove baking paper and legumes and leave to cool in ramekins.
Before serving, remove pastry shells from ramekins. Fill each shell with raspberries, sprinkle with powdered sugar and garnish with mint leaves. Serve.
