- 800 grams Pumpkin (seedless, diced)
- 1 carrot (diced)
- 3 Tbsps butter
- 1 l Beef broth
- salt
- freshly ground pepper
- 1 garlic clove
- 1 bunch scallions
- 1 tsp freshly grated ginger
- ½ tsp cinnamon
- Nutmeg
- 400 grams Coconut milk
- 150 grams Double cream
- 2 Tbsps Shredded coconut

Preparation steps
1.
Rinse the scallions and chop. Sweat the scallions in hot butter. Add the ginger, diced pumpkin and carrot. Pour in the broth and season with salt, pepper, nutmeg and cinnamon. Press the garlic and add to the soup. Simmer for about 20 minutes.
2.
Puree the soup. Bring to a boil and stir in the cream and coconut milk.
3.
Serve sprinkled with grated coconut.
