Proscuitto Rolls with Carrots and Arugula

12 baby carrots (with green aprts)
12 slices Prosciutto (thin)
1 bunch Arugula
2 Tbsps Mustard (spicy)
caperberry (for garnishing)
salt
peppers (White)
Ciabatta (for serving)

Preparation steps

1.

Peel carrots and cut off green parts. Blanch carrots in boiling salted water for 3-5 minutes. Drain, rinse in cold water and drain again.  

2.

Rinse and spin dry arugula. Arrange proscuitto slices side by side on a board or on clean work surface, lightly spread with mustard and arrange arugula and one carrot on each slice. Season lightky with salt and pepper nad roll up. Arrange on plates. Garnish with capers and serve with ciabatta, if desired.
