14 ozs Pork belly (8 thin slices)
14 ozs veal schnitzel (8 small schnitzels, pounded thin)
2 carrots (cut into 6 cm sticks)
1 stalk Celery (cut into 6 cm sticks)
6 Tbsps olive oil
1 shallot (finely chopped)
cup dry white wine
1 ¼ cups canned Tomatoes (chopped)
1 clove garlic cloves (finely chopped)
2 Tbsps Fresh herbs (basil, parsley, rosemary) finely chopped
To garnish
4 sprigs rosemary

Preparation steps

1.
Lay the belly pork slices on the work surface and lay the schnitzels on top. Place 1 carrot stick and one celery stick in the middle of each. Roll up and fix with a wooden tooth pick.

Heat 2 tbsp oil and fry the shallot. Add the pork rolls and brown on all sides. Pour in the wine.

Add the tomatoes and season with salt and ground pepper. Cook gently for approx. 15 minutes, stirring occasionally.
4.
For the herb oil: mix the garlic with the herbs and the remaining oil.
5.
Check the seasoning of the tomato sauce. Arrange the pork rolls on the sauce and drizzle herb oil over them. Garnish with rosemary and serve.
