4 slices Pork cutlet (each 140 grams)
3 Zucchini
4 rosemary
1 garlic clove
4 slices ham
Canola oil
3 Oranges (organic)
2 centiliters Orange liqueur
1 tsp cornstarch
half lemons (juiced)
salt

Preparation steps

1.

Rinse pork cutlets, pat dry and pound flat.

2.

Rinse and trim zucchini. Cut 2 zucchini lengthwise into thin slices and dice the remaining zucchini.

Peel and chop garlic.

4.

Pluck rosemary. Finely chop approximately 1 teaspoon.

5.

Zest the peel from 1 orange in strips and squeeze the juice from the oranges.

Sauté diced zucchini with garlic and chopped rosemary in 2 tablespoons oil. Season with salt and pepper and puree with an immersion blender. Remove from heat and let cool slightly.

Spread meat with zucchini paste, top with the the ham slices and roll. Secure with toothpicks. Season with salt and pepper and fry in 2 tablespoons hot oil on all sides. Remove from pan and bake in preheated oven at 160°C (approximately 325°F) until cooked through, 15-20 minutes.

Deglaze pan with orange, lemon juice and orange liqueur and bring to a boil. Mix cornstarch with a little water and stir into the sauce. Cook until slightly thickened. Season with salt and pepper.

9.

Fry zucchini slices in 2 tablespoons oil, add rosemary and season with salt and pepper. Spread on warm plates and top with sauce. Remove toothpicks from rolls and cut each into three pieces. Arrange on the sauce and serve sprinkled with orange zest.
