- 1 Tbsp cocoa powder
- 2 tsps ground allspice
- 2 tsps dark brown sugar
- ½ Tbsp salt
- 1 tsp freshly ground Black pepper
- 56 ozs pork fillets
- 3 Tbsps extra virgin olive oil
- For the sauce
- 3 Tbsps extra virgin olive oil
- 2 cloves garlic cloves (finely chopped)
- 1 tsp salt
- ½ tsp freshly ground Black pepper
- 3 Tbsps cocoa powder
- ½ cup pork stock (or chicken stock)
- 1 tsp balsamic vinegar
- 14 ozs canned Tomatoes
- 1 sprig rosemary
- To garnish
- Lemon wedge

Preparation steps
1.
Mix together the dry ingredients and rub well into the pork. Place on a plate, cover and set aside for 2 hours.

Drizzle the pork with the oil and cook on the heated barbecue for 15-20 minutes, turning the fillets as they cook, until well browned. Cut into serving pieces.

For the sauce: heat the oil in a pan and cook the garlic until softened. Add the salt, pepper and cocoa and stir until smooth.
4.
Stir in the stock, vinegar and tomatoes and bring to a simmer. Add the rosemary, cover and simmer for 10 minutes, stirring occasionally. Pour into a serving bowl.
5.
Serve the pork with the sauce. Garnish with lemon wedges and rosemary.
