This is a unique twist on flan, a traditional Mexican dessert. The plums add some texture and a beautiful sweet-tart flavor, as well as nutrients such as vitamin A, which supports skin and eye health.

This dessert is surprisingly low in sugar, with only two tablespoons per serving.

1.333 cups Ricotta cheese
1 Tbsp Corn starch
¼ cup sugar
1 tsp Vanilla
1 unwaxed lemon (zest)
6 ripe, red Plum (sliced into wedges)
2 Tbsps coarse sugar (for sprinkling)

Preparation steps

Heat the oven to 375°F. Grease four oven-proof individual size ramekins with butter.

Beat the egg yolks with the ricotta, cornflour, sugar, vanilla, and lemon zest. Whisk the egg whites with a pinch of salt until stiff then fold into the mixture. Fold in the plums.

Divide the mixture between the ramekins, smooth the top flat and bake in the oven for around 30 minutes.

Remove from the oven, sprinkle with sugar and serve warm.
