- 1 garlic clove
- 1 red chili pepper
- 100 grams starchy potatoes
- 1 carrot
- 2 red Bell pepper
- 2 Tbsps olive oil
- 800 milliliters Vegetable broth
- salt
- peppers
- 100 grams Crème fraiche
- 1 tsp lemon juice
- 1 pinch sugar
- scallions (for garnish)

Preparation steps

Peel and dice the onion and garlic. Rinse the chile, halve, remove the seeds and chop. Peel the potatoes and carrot and cut into pieces. Rinse the bell peppers, halve, remove the seeds and chop.

Saute the vegetables in hot oil for 2-3 minutes until translucent. Pour in the broth and season with salt and pepper. Let simmer for about 20 minutes, until soft. Puree the soup. Depending on the desired consistency, let simmer or add more broth. Stir in the creme fraiche. Do not boil. Season with salt, pepper, lemon juice and sugar.

Serve garnished with chives.
