- 2 ⅔ cups dried Split pea
- 1 Ham bone
- 3 Tbsps butter
- 1 cup finely chopped yellow onion
- ½ cup finely chopped Celery
- ½ cup finely chopped carrots
- 3 cloves garlic cloves (peeled and minced)
- 1 tsp salt
- ¾ tsp freshly ground Black pepper
- 8 cups water (plus more as needed)
- 1 bay leaf
- 2 tsps fresh thyme
- 1 cup seasoned Crouton
- ½ cup grated Parmesan

Preparation steps

Pick over the peas and place them in a large bowl, cover with water by 2 inches and soak for 8 hours or overnight. Drain the peas and set aside.

Place the ham bone in a pot, cover with water and bring to a full boil. Reduce heat and simmer for about 1 hour. Drain, remove ham from the bone and set aside.

Meanwhile, in a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2 to 3 minutes. Add the celery and carrots and cook, stirring, until just tender, about 3 minutes. Add the garlic and cook, stirring, until fragrant or about 45 seconds.

Add the drained peas, ham, salt, pepper, and cook, stirring for 2 minutes. Add 8 cups of water, the bay leaf and thyme, and cook, stirring occasionally, until the peas are tender, about 1 hour. Add more water as needed, if the soup becomes too dry or thick.
5.
Remove the bay leaf and discard. Check the seasoning and adjust if necessary. Ladle into serving bowls, and top with croutons and grated cheese. Serve immediately.
