Preparation steps
1.
Heat the oil in a large heavy based pan, add the onion and fry gently for a few minutes to soften, but not brown.

Put 900ml/ 4 cups of water on to boil.

Add the courgettes to the pan, and cook for a couple of minutes, then stir in the risotto rice.

Add 300ml/1 1/4 cups boiling water, stir and cook for a few minutes until the liquid is absorbed. Add another 300ml/1 1/4 cups of rice and stir from time to time until the liquid is absorbed.
5.
Add the peas and final amount of water, stir and simmer until the rice is tender and the liquid is almost absorbed.
6.
Remove from the heat and stir in the cheese to serve.
