Pasta, Bacon and Parmesan Frittata

Cook the capellini according to package directions until al dente. Drain, rinse under cold water and drain well.
Rinse, trim and finely chop the zucchini.
Shallot and garlic, peel and finely chop.
Cut the bacon into strips.
In a bowl, whisk the eggs with cream, mix in pasta, zucchini, shallot, garlic, bacon and Parmesan. Season with salt and pepper.
Heat 2 tablespoons of oil in a skillet and pour in the pasta and egg mixture. Cook over medium heat until the underside is golden brown, 3-4 minutes.Place a sheet pan or a large plate over the skillet and invert the frittata onto it. Add the remaining oil to the pan, slide the frittata back into the pan and cook until golden brown on the underside, 3-4 minutes. Slide the frittata onto a plate or a cutting board and cut into wedges. Garnish to taste with Parmesan.
