- 400 grams Tagliatelle
- 500 grams Green cabbage (trimmed)
- 500 grams Tomatoes
- 1 onion
- 2 Tbsps olive oil
- 200 milliliters Vegetable broth
- salt
- freshly ground peppers
- scallions (for garnish)
Preparation steps

Cut white cabbage coarsely and bring to a boil in a pot with the vegetable broth. Reduce heat, cover and simmer until tender, about 10 minutes.

Blanch tomatoes in hot water, rinse in cold water, peel, quarter and remove the seeds. Dice tomatoes.

Cook the pappardelle until al dente in boiling salted water.

Peel onion and finely chop. Sauté onion in oil until softened, then add tomatoes, cabbage and broth. Simmer briefly if necessary to evaporate some of the liquid. Season with salt and pepper to taste, mix in drained pappardelle and transfer to plates. Garnish with chives and serve.
