250 grams All-Purpose Pastry flour
1 pinch salt
500 milliliters milk
½ tsp Baking powder
2 ripe Apple (such as Boskoop)
40 grams clarified butter
12 slices Bacon
2 Tbsps fresh marjoram

Preparation steps

In a large bowl, mix the eggs with the flour, the salt, the milk and the baking powder until the consistency of a smooth batter and let rest for 20 minutes. Preheat the oven to 200°C (approximately 395°F) top and bottom heat. Peel the apples, remove the core with an apple corer and cut the apples into thin slices.

In an oven-proof pan, melt some butter and add 1 ladle of the batter.

By slightly turning and tilting the pan, distribute the batter evenly in the pan.  Place 3 to 4 apple slices onto the batter, let cook briefly, place 2 to 3 slices of bacon over the top and bake until golden brown in the preheated oven.

With the remaining batter, repeate the process with the apple slices and the bacon just until everything is used up.

Serve garnished with fresh marjoram leaves.
