- 4 fresh Salmon fillet

Heat the oil in a frying pan and cook the tomatoes until almost tender.

Add the salmon fillets to the pan and cook for 1-2 minutes on each side until until golden brown and just pink in the middle.

Squeeze a little lemon juice over the fillets and season to taste with salt and pepper.
