- 1 Oxtail (about 1.8 kilograms, divided into pieces)
- 200 grams shallots
- 300 grams Pumpkin
- 50 grams smoked Bacon (diced)
- salt
- freshly ground peppers
- 125 milliliters Madeira Wine
- 2 Tbsps grained Mustard
- 500 milliliters clear Broth (Instant)
- 500 grams carrots
- 3 stalks Celery
- 200 grams Grape
- 2 Tbsps parsley (finely chopped)
- 2 Tbsps light Roux

Preparation steps
1.
Peel the shallots and cut into wedges.
2.
Cut pumpkin flesh into pieces.
3.
Fry the bacon in a roasting pan until crispy, add pumpkin and fry for 5 minutes. Remove and set aside.

Rub oxtail with salt and pepper and fry in the bacon fat. Stir in the shallots, wine, mustard and broth, cover and let simmer for about 1.5 to 2 hours.

Peel, rinse and slice the carrots. Rinse celery and cut diagonally into pieces. Add both to the meat and cook for another 20 minutes.
6.
Rinse grapes, cut in half if necessary and add to the oxtail alongwith the pumpkin in the last 5 minutes of cooking time. Season with salt and pepper. Mix the sauce with the roux.
7.
Arrange the oxtail with vegetables and sauce and serve sprinkled with parsley.
