2 kilograms Oxtail (cut in slices)

1 yellow onion
2 garlic cloves
2 stalks Celery
30 grams clarified butter
1 Tbsp Tomato paste
2 bay leaves
2 sprigs thyme
500 milliliters dry Red wine
2 liters Beef stock
400 grams Tagliatelle

Preparation steps

Rinse the oxtail pieces, pat dry and season both sides with salt and pepper. Peel the carrots, the onion and the garlic and coarsely chop. Trim the celery, rinse and chop roughly. Heat the butter in a saucepan and sear the oxtail pieces on both sides.

Take out oxtail pieces, set aside and leave the vegetables in the pot. Sauté 3-4 minutes while stirring, add the tomato paste and spices and let take some color. Deglaze with a little red wine and let boil down completely. Pour in the rest of the red wine and the stock and season well with salt and pepper.

Place the oxtail pieces back into the sauce and simmer over medium heat 1 1 / 2-2 hours. Meanwhile, cook the noodles in salted boiling water until al dente. Serve the oxtail pieces with some sauce and the noodles on warmed plates.
