Noodle Soup with Vegetables and Lentils
Combine lentils with broth in a large saucepan and bring to a boil. Add chopped tomatoes.
Peel and thinly slice carrots. Rinse celery and dice. Add both to lentils and season soup with salt, pepper and herbs. Add pasta and cook for about 10 minutes or until pasta and vegetables are tender.
Season lentil soup with balsamic vinegar to taste, pour into bowls and serve.
