Put the chicken in a large pot with the spices and a good pinch of salt. Add enough cold water to completely cover all the ingredients. Bring to the boil and simmer for around 1 hour on a moderate heat.
Remove the meat from the stock and allow to cool. Sieve the liquid into a fresh pot and bring back to the boil with the vegetables and pasta. Simmer on a moderate heat for 10-15 minutes. Season to taste with salt, pepper, lovage and parsley.
Strip the meat from the chicken and chop into bite-sized pieces. Return to the broth and warm through. Serve the stew in pre-heated bowls, garnished with parsley.
