- 500 grams Chili pappardelle
- salt
- 1 shallot
- 2 garlic cloves
- 400 grams fresh Chanterelle
- 20 grams butter
- ½ bunch parsley
- salt
- freshly ground peppers

Preparation steps

Cook the pasta in boiling salted water until al dente. Peel and finely chop the garlic and shallot. Clean and chop the mushrooms. Heat the butter in a frying pan and sweat the shallots and garlic until translucent. Add the mushrooms and fry until until the liquid has completely evaporated, turning occasionally.

Rinse the parsley, shake dry, pluck off the leaves and mix with the mushrooms. Season with salt and pepper. Drain the pasta, add to the mushrooms and toss everything together in preheated bowls. Serve as desired with freshly grated parmesan cheese.
