Mixed Nut Flatbreads
- For the dough
- ½ cube Yeast 21 grams (approximately 3/4 ounce)
- 200 grams Pastry flour
- 200 grams Whole Grain Rye Flour
- ½ tsp salt
- 50 milliliters olive oil
- 150 grams mixed chopped Nut (such as almonds, hazelnuts, walnuts)

Mix the yeast with about 200 ml (approximately 1 cup) of warm water mix. Mix the flour with the salt in a bowl. Add the dissolved yeast with the olive oil and the chopped nuts to the flour and knead with the knead setting of an electric hand mixer to form a smooth dough. Cover and let rise in a warm place for about 45 minutes, or until doubled in volume.
Preheat the oven to 200°C (approximately 400°F). Knead the dough on a floured surface, then roll out to form 2-3 patties of about 20 cm (approximately 8 inches) in diameter. Place on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes. Remove, let cool and cut into pieces. Serve garnished with butter curls.
