150 grams Ground beef
1 Tbsp clarified butter
280 grams Pastry flour
½ tsp salt
½ tsp ground paprika (sweet)
2 Tbsps chopped Pistachio
1 shallot
1 garlic clove
2 ½ tsps Baking powder
½ tsp baking soda
1 egg
50 milliliters vegetable oil
300 grams Buttermilk
also
40 grams chopped Pistachio
1 Muffin tin (12-well)
butter (for the baking dish)

Preparation steps

1.

Butter the wells of the muffin pan.

2.

Cook the ground beef in the clarified butter until crumbled.

Peel and mince the shallots. Peel the garlic.

4.

Mix the flour with the spices, pistachios, ground beef, shallot, baking powder and baking soda. Push the garlic through a press, and add it to the mixture. Stir to combine. 

5.

In a large bowl, whisk the egg, oil and the buttermilk and mix well. Add the flour mixture to the egg mixture and, stir until the dry ingredients have been absorbed.

Preheat the oven to 180°C (approximately 350°). Divide the  meat mixture into the muffin tin and top each with some of the chopped pistachios. Bake 20 - 25 minutes baking. Remove, and let the muffins rest for 5 min. Remove from the muffin pan and serve.
