2 ½ cups pizza dough mix (left to prove for 30 minutes)
cup tomato passata
12 slices Pancetta
1 tablespoon rosemary (finely chopped)
1 onion (thinly sliced)
olive oil

Preparation steps

1.
Preheat the oven to 240°C (220 fan) | 450°F | gas 8 and preheat two large baking sheets.
2.
Divide the pizza dough into 12 pieces and roll each one into a rough circle about 0.5cm thick.
3.
Spread each circle of dough with passata and top with pancetta, rosemary and onion.
4.
Transfer to the preheated baking sheets for 8-10 minutes or until golden and crisp. Drizzle with extra virgin olive oil, grind over some pepper and serve hot.
