150 grams Penne

200 grams carrots
2 stalks Celery
120 grams green Beans
200 grams Zucchini
2 small onions
2 garlic cloves
2 Tbsps olive oil
150 grams diced Pancetta
1 bay leaf
1 Vegetable broth
freshly ground peppers
½ tsp dried thyme
1 Tbsp freshly chopped parsley
40 grams coarsely grated Parmesan

Preparation steps

Cook pasta in a pot with plenty of boiling salted water until al dente, drain, rinse with cold water and drain again.

Peel carrots and dice. Rinse celery, remove strings and cut into slices. Rinse beans and cut into small pieces. Rinse zucchini, cut off ends, cut into quarters lengthwise and cut into pieces. Peel onions and garlic, finely dice and saute in oil in a large saucepan until translucent. Then add bacon, carrots, beans, celery, zucchini, bay leaf and broth and then season with salt, pepper and thyme. Let simmer for about 10 minutes. Finally, add pasta and let briefly simmer until warm. Remove bay leaf, season to taste and serve minestrone soup in deep plates or soup bowls.

If desired, serve with fresh Parmesan cheese and ciabatta bread.
