- 2 Tbsps olive oil
- 1 onion (finely chopped)
- 1 carrot (diced)
- 1 clove garlic cloves (crushed)
- 1 tsp paprika
- 1 pinch dried oregano
- 3 ½ ozs navy bean (soaked overnight in water)
- 6 cups water
- 1 tsp tomato puree
- 7 ozs Tomatoes
- salt
- peppers

Preparation steps
1.
Heat the oil in a large pan. Add the onion, carrot and garlic and cook gently for 5 minutes until the vegetables are softened.
2.
Stir in the paprika and oregano and cook for 1 minute.
3.
Add the beans and half the water. Bring to a boil, then reduce the heat, cover and simmer for 30 minutes.
4.
Add the remaining water, tomato puree and tomatoes and simmer gently until the beans are tender. Season to taste with salt and pepper.
5.
Ladle into warm bowls and sprinkle with chopped coriander. Garnish with coriander leaves.
