- 400 grams Beets
- ½ stalk cinnamon
- salt
- ½ tsp fennel seeds
- ½ stalk Licorice
- 3 Tbsps olive oil
- 2 Red onions (120 grams)
- 2 Tbsps Crème de cassis
- 2 Tbsps Red wine vinegar
- freshly ground peppers
- 1 handful Arugula

Preparation steps
1.
Rinse beets, place in a small saucepan and cover with water. Add cinnamon stick, fennel seeds, licorice and 1/2 teaspoon salt. Bring to the boil, reduce heat and simmer over medium heat for 45-60 minutes. Drain, let cool and peel beets. Cut beets into thin slices (use gloves to prevent color staining skin).

Heat oil in a saucepan.

Peel onions, cut into wedges and fry in oil. Add Crème de cassis and vinegar. Add beet slices, simmer for 5-10 minutes and season with salt and pepper. Leave to cool.
4.
Rinse arugula and shake dry. Arrange arugula on small plates and cover with beets. Serve if desired with fresh white bread.
