2 large onions
2 garlic cloves
4 Tbsps olive oil
1 lg can Tomatoes (800 grams drained)
400 grams Ground meat
4 Tbsps breadcrumbs
1 egg
2 Tbsps Parmesan (freshly grated)
3 Tbsps mixed Italian Fresh herbs (finely chopped)
400 grams Penne
salt
freshly ground peppers
ground paprika
shaved Parmesan (for garnish)
thyme (for garnish)

Preparation steps

Peel and dice onions and garlic. Sauté onions and garlic in 2 tablespoons hot oil. Remove half and set aside. Add tomatoes with their liquid to the pan and crush with a potato masher. Simmer, uncovered, about 30 minutes.

In a bowl, combine ground meat, reserved onions and garlic, bread crumbs, egg, Parmesan cheese and herbs. Season with salt and pepper and mix well. With moistened hands, form mixture into table tennis ball-sized meatballs. Fry meatballs in remaining oil until golden brown on all sides. Add the tomato sauce, and simmer until meatballs are cooked through, about 10 minutes.

Cook pasta in boiling salted water until al dente. Season tomato sauce to taste with salt, pepper and paprika and serve with pasta. Sprinkle with Parmesan cheese and garnish with thyme.
