- 1 bunch Arugula
- 3 Tbsps lemon juice
- 2 tsps grated Lemon peel
- 250 softened butter
- salt
- freshly ground peppers

Preparation steps
1.
Rinse and trim the arugula. Pat dry and remove any hard stems.

Finely chop the arugula then mix thoroughly with the softened butter, lemon juice, and lemon zest. Season to taste with salt and pepper.
3.
Form the butter into a roll, then wrap in aluminum foil and place in the refrigerator until ready to serve. Cut into thick slices, and serve.
