4 Tbsps Pastry flour
200 grams freshly grated Gruyere
100 grams thinly sliced Cheddar cheese
400 grams Whipped cream

Preparation steps

Rinse and finely chop the leeks.

Separate the eggs. Mix the flour with 6 tablespoons of whipping cream until smooth. Mix the cream, leeks, garlic, thyme and grated cheese together. Beat the egg whites until stiff and fold into the mixture with salt, pepper and nutmeg. Fill into muffin tins (greased or lined with paper cups), cover with cheddar cheese and bake at 180°C convection (approximately 350°F) for 20 minutes until golden brown.
