- 1 Leg of lamb (bone in)
- 3 Tbsps olive oil
- 2 heads garlic cloves (halved horizontally)
- 3 Celery (chopped)
- 2 onions (peeled and quartered)
- 2 cups chicken stock
- 1 ⅔ cups dry white wine
- thyme
- rosemary
- salt
- peppers
- 4 cups dried Flageolet beans (drained)

Preparation steps
1.
Preheat the oven to 170°C | 325F | gas 3. Sear the lamb on all sides in a roasting tin.
2.
Remove from the heat and add the vegetables and stock, then the herbs and seasoning.
3.
Cover with foil and bake in the oven for about 3 hours, until very tender.
4.
Remove the lamb from the tin and sieve the cooking juices into a saucepan.
5.
Bring to a simmer and add the beans. Leave to cook gently to absorb all the flavours for about 15 minutes while the lamb rests.
6.
Carve the lamb thickly and serve with the beans and juices.
