4 Tbsps olive oil
4 slices lamb (from the shoulder, each about 160-200 grams)
150 grams smoked Pancetta (pig, 0.5 cm thick slices)
1 large onion
4 garlic cloves
2 tsps ground paprika
5 Tbsps lemon juice
3 Tomatoes
salt
peppers
400 grams thick white Beans (dried, soaked overnight)
150 milliliters white wine
400 milliliters Vegetable broth
Basil (cut into strips)

Preparation steps

Peel the onion and garlic and finely chop. Rinse the tomatoes and cut into wedges. Heat the oil in a large pot. Brown the lamb on all sides briefly and remove from the pot. Add the onion to the pan and saute with the diced bacon in the oil for 4-5 minutes. Put the garlic along with the meat and 2 tablespoons of lemon juice back into the pot. Pour in the wine and broth and simmer over low heat in a closed pot for 1.5-2 hours. Add the drained beans 40 minutes before the end of cooking, the tomatoes and possibly some water.

Add the remaining lemon juice. Season with salt and pepper. Serve in deep bowls garnished with basil strips.
