- 4 seeded Burger buns (split)
- ½ cup bay leaves
- 2 cups pork fillets (trimmed and roughly chopped)
- ½ cup fresh breadcrumbs
- 1 tsp Wholegrain Mustard
- 1 Tbsp tomato Ketchup
- salt
- peppers

Preparation steps
1.
Pre-heat the oven to 200°C | 400F | gas 6.
2.
Grease and line a baking tray with greaseproof paper.
3.
Combine the pork fillet, breadcrumbs, wholegrain mustard, tomato ketchup and seasoning in a food processor. Pulse until the pork is coarse.
4.
Remove from the processor and shape into 4 even sized patties. Bake for 15-20 minutes until the meat is cooked. Remove and leave to cool for a minute.
5.
Place a few rocket leaves on the bottom half of the buns. Top with a patty, then some more rocket leaves on top.
6.
Place the top half of the burger in place before serving.
